Sorrel is one of those drinks that tastes just as good as it looks, and maybe even better! It has a deep, ruby-red hue and a bold, tangy-sweet flavour, it’s one of those cherished traditions of the Caribbean.

Dried sepals of the hibiscus flower

Made from the dried sepals of the hibiscus flower, sorrel is typically enjoyed year-round but truly shines during the holiday season. Here's how I make it.

Ingredients

  • 2 cups dried sorrel

  • 8–10 cups water

  • 1 cinnamon stick

  • A few pieces of fresh orange peel

  • 3–4 whole cloves

  • Sugar to taste (I use approximately 1 cup)

Method

  1. Combine all the ingredients in a large pot.

  2. Bring to a boil, reduce the heat and let it simmer gently for approximately 30 minutes.

  3. Allow the mixture to cool completely, and strain into a large jug.

  4. Taste and adjust the sweetness as needed.

  5. Chill and serve.

In my experience, sorrel tends to taste even better the next day! Make it ahead of time and let the flavors deepen in the fridge, ideal for prepping before holiday gatherings.

Serve over ice and enjoy a Caribbean classic!
